pizza soup

(This post would be a little more visually exciting if I had thought to take a photo or two…)

This is the second year that Mark and I have participated in our parish’s soup suppers on the Fridays of Lent. Last year we googled vegetarian soup recipes (since we only thought of potato and figured a lot of others would as well), and came across one called pizza soup. This year we decided to make that one again, and upon another google search found a couple recipes to use as a jumping off point.

It was a pretty big hit…our crockpot was emptied and after Mass on Saturday a gentleman asked us for the recipe. 🙂

Ingredients:

bell peppers
onion
mushrooms
olive oil
vegetable stock
diced or stewed tomatoes
basil
mozzarella cheese for garnish

(for non-vegetarian, you can use beef stock and pepperoni or sausage)

Saute the chopped veggies in a bit of olive oil. Then pour in a couple cups of stock, a couple cans of tomatoes, and basil to taste. Super easy, pretty yummy! I think we might try a meaty version of it sometime.
